This rich and flavorful Junmai Daiginjo is made from Yamada Nishiki rice, contract grown the Special Toku A region of Hyogo Prefecture and then aged at 10°C for about 5 years. Just before shipping, a Junmai Daiginjo with a 20% polishing ratio and one with a 35% polish ratio are blended at a 9:1 ratio. It boasts a deep, robust aroma and a well-structured, smooth and elegant flavor with a crisp sharp finish. It is enjoyed around the world as a ‘prayer sake for making dreams come true’.
