December Special Sake

APERITIF/ DESSERT SAKE SELECTION 

 NANBU BIJIN ALL KOJI

Usually, sake is made from 80% steamed sake rice and 20% Koji rice, but this sake, “All Koji” is made from 100% Koji rice. Enjoy the very luxurious Koji rice sweetness and velvety texture!

#1991 NANBU BIJIN ALL KOJI JM 12/500ml. 

 NANBU BIJIN NO SUGAR UMESHU

Nanbu Bijin Umeshu infuses only Ume plums into their one-of-a-kind “all koji” Junmai Sake. Sugar is not needed, since plums and koji rice are naturally sweet. This sake has an attractive rose pour and high acidity.

 KATSUYAMA “LEI”
Junmai Ginjo

A fruity aroma and rich taste evoking Japanese fine musk melon, along with umami and its accompanying sweetness, make for a very drinkable sake. While ideal for those new to sake, the rich flavor also makes it well suited as an aperitif.

 KATSUYAMA “GEN”
Junmai Daiginjo

A sake reminiscent of pourriture noble (noble rot) wines like Sauternes, Gen is best enjoyed in the same situations as such wines. It works as a dessert wine or after-dinner drink, while showing good affinity with foods with cheese.

 AMABUKI KYOTO MATCHA YUZU SAKE

Both tart and refreshing, this unique Matcha liqueur (with a hint of yuzu!) is a made with pure Junmai sake, fine Kyoto matcha powder and the aromatic subterranian waters of Mount Sefuri located between Sage and Fukuoka prefectures.

 HAKKAISAN KIJOSHU

Kijoshu is an elegant and luxurious sake that is created by replacing some of the water used during the fermentation period with finished sake. This lends a rich and lightly sweet taste to this sake.
