Established in 1806. Their brand is based off the Japanese crane and their name is derived from the words “wizard” and “crane”. The water used in brewing is from the same source that is used to grow rice. They call it a “domaine” like the french term for wine producer who own their own vineyard. A very stylish sake that pairs well with Japanese and French cuisine.

Lean and bursting with flavor, this Junmai Daiginjo is milled to 35% remaining – the optimal milling rate for Yamada Nishiki according to the master brewer. Senkin Issei is the entry-level sake for their premium series, which are all pressed using the Fukurozuri pressing method. Notes of juicy melon and fuji apple make this a true delight to sip on with a wide variety of non-Japanese dishes using cheese and/or dairy products.

Senkin’s master blend – and indeed the ultimate Sake Assemblage – has arrived.The three core sake rice varietals of Senkin’s local growers – Yamada Nishiki (polished to 7%), Kame no O (polished to 35%) and Omachi (polished to 40%) – are slowly, painstakingly and expertly brewed using their own local yeast and groundwater, drawing forth the most special qualities each rice. The three batches are then blended carefully, optimizing and harmonizing the flavors of each according to the golden ratio.
