TOFU FLAN with Kokuto Umeshu

Ingredients (4 servings)


Silk tofu 250g
Milk or soy milk 200ml
Sugar 50g
Gelatin 5g
Water (for gelatin) 50ml
Brown sugar Umeshu Appropriate amount

1. Soak gelatin in water and heat it in a microwave oven (500W) for about 30 seconds without wrapping to dissolve it.

2. Put sugar and about 1/4 of tofu in a bowl and mix so that no lumps remain. Add the remaining tofu in 3 portions and mix well each time. Add milk little by little, mix until smooth each time, add gelatin solution of 1. and strain with a fine-mesh strainer.

3. Pour into small glass containers and chill in the refrigerator for at least 3 hours to harden. When it hardens, sprinkle brown sugar umeshu.
