“Kanzuri” is a pungent relish of chilies, rice malt and salt. Fermented in the snow and aged for 3-6 years.

Regualr fermented Kanzuri takes 3 years to complete. This special “Nama Kanzuri” is aged for 6 years and only 100 bottles are released every month. The flavor is deep and complex with a ginjo aroma just like sake. This condiment goes well with sashimi, chicken or vegetables.
