Dedicating their passion of Himono for over 100 years and 4 generations, KOUJIRUSHI KONISHISHOUTEN perfected the Art of Himono in its Premium Himono series. The premium himono series is made using a unique manufacturing method called “osmotic low temperature aging drying ®” on carefully selected seasonal fish. The unique method of blending in light salt through a semipermeable membrane at a low temperature of 0-celsius degree removes only the excess water contained in the fish (moisture causes it to deteriorate during freezing) by the power of osmotic pressure. The method oxidation as it has low salt content, unlike typical machine-dried fish. It seals in the umami, color, and aroma of the fish and amplifies the taste and richness.
