Tantan-men（担々麺）is the Japanese take on Sichuan Dan Dan noodles. Tantanmen eaten in Japan generally has soup, but this style is arranged for Japanese people, and the characteristic of authentic Chinese dandan noodles is that there is no soup. Its special characteristic is the hot spices and creamy sesame paste and miso-based soup. In recent years, soupless tantan-men, mixed noodle-style tantan-men, and chilled tantan-men gained popularity.
