This soup stock is made with chicken carcass, pork bones, chicken fat and pork fat. This broth is not salted, so you can season it any way you want and can be paired with any soup base. Great for hotpot as well.
Ramen broth is by far the most important part of a bowl of ramen noodle soup. Different parts of pork bones and parts are used to make authentic Tonkotsu (pork bones) style soup stock and different combination of bones can create unique flavors and depth to the stock. It is very time consuming and labor intensive to make the stock from scratch , but all the gelatin, fat and goodness that comes out of the bones will make your soup stock very special!
