Crafted from 100% domestically-grown Yamada Nishiki rice, this Junmai Ginjo is light-bodied, crisp, and refreshingly delicate. Ashokan, their first sake blended from two batches, achieves a harmonious balance of bright acidity, floral Ginjo aroma, and a subtle touch of umami. Named for the Ashokan Reservoir—a vital source of New York City’s celebrated water supply—this sake honors the purity and balance of the natural systems that sustain life. This refreshing and crisp junmai ginjo has a light body, with notes of green apple, honeydew melon, and lime leaf.

This sake is crafted from America-grown Calrose, polished to 50%, and fermented slightly warmer than their Ginjo sake to reveal rich, earthy depth. A favorite among bold Junmai lovers, this namazake is Brooklyn Kura’s second flagship, capturing the lively, vibrant essence of unpasteurized sake. Named for the iconic entrance of their first brewery taproom, it celebrates the doorway to their craft and community. Full bodied, earthy, dry, umami-laden, with subtle notes of banana and ripe melon.

CATSKILLS JUNMAI DAIGINJO

Junmai Daiginjo represents sake at its pinnacle, requiring meticulous craftmanship, time, and the finest ingredients. Catskills, their expression of this style is Brooklyn Kura’s most luxurious offering—delicate on the palate, highlighting the soft, smooth character of New York water, and finishing with a burst of fresh melon notes. Named after the Catskills Mountains, the source of the pristine water that shapes every Brooklyn Kura sake. Delicate, clean, and nuanced, with notes of tropical fruit and delicate citrus, with just a hint of vanilla. Finishes with well balanced acidity and smooth creaminess.

Crafted with 100% Arkansas-grown Yamada Nishiki, sake rice and fermented with a single modern yeast at carefully controlled low temperatures, this Junmai Ginjo presents a dry, light, and elegantly restrained profile. Named for Arkansas’s Grand Prairie—home to Isbell Farms, the first U.S. farm to cultivate Yamada Nishiki—the region’s exceptional growing conditions yield rice of remarkable quality. Dry and light with notes of steamed rice, honeydew melon, green apple, and finishing with hints of star anise.

This cloudy-style sake is crafted by fermenting and pressing a traditional Junmai, then blending in amazake—a weather phenomenon where cold air passing over warmer lake waters produces heavy snow. Medium bodied, and well balanced with a creamy mouthfeel. Hints of sweetness and rice forward notes on the palate that meld with the bright fruit flavor such as pear, and golden apple.

Crafted from a blend of Yamada Nishiki and Calrose, Number Fourteen marks New York’s first Junmai Ginjo. Their flagship—and still a favorite—this sake achieves a harmonious balance: the richness of Calrose, the softness of Yamada Nishiki, and a pronounced expression of the distinctive aromatic character of sake yeast. Named Number Fourteen in honor of their Master Brewer Brandon’s fourteenth recipe while developing the Brooklyn Kura style in their first brewing lab. Light bodied, delicate structure, soft aroma of flower and apple, notes of tropical fruit.

OCCIDENTAL DRY HOPPED JUNMAI

This distinctive sake begins as a traditionally crafted single-yeast Tokubetsu Junmai. After fermentation and pressing, it is gently infused with dry hops, capturing their aromatic character. Initially, the hops impart a green tint to the sake, which, over time, evolves with oxygen and alcohol into its signature pink hue. Named Occidental, meaning “of the West”, it embodies a uniquely American approach to the art of craft sake. Gorgeous nose of grapefruit zest, sake pours with a beautiful rose hue, velvet smooth, lightly honeyed character with a finish of citrus rind.
